1 rotisserie chicken -OR- 1 lb. of boneless, skinless chicken breasts 2 cups of uncooked egg noodles 1 (32 oz) container of low-sodium chicken broth 1 (14.5 oz) can of diced tomatoes, undrained 3 carrots, peeled and sliced into thin coins 3 stalks of celery, sliced into thin coins 1/2 cup of chopped onion 1 bay leaf 1 tsp. dried thyme leaves 1/4 tsp. black pepper 1 bag (11 oz) chips, any variety
Instructions:
In a large pot or Dutch oven, combine the chicken broth, tomatoes, carrots, celery, onion, bay leaf, thyme leaves and pepper. Bring to a boil over medium-high heat. Add the noodles and chicken and return to a boil. Reduce the heat to low and simmer for 10 minutes or until the noodles are tender. Remove the bay leaf and discard. Divide the soup among four bowls and top each with about 1/4 cup of chips.
