2 tablespoons olive oil 1 cup chopped onion 4 garlic cloves, minced 4 cups chicken broth 1 (15-ounce) can kidney beans, rinsed and drained 1 (14.5-ounce) can diced tomatoes, undrained 1 teaspoon dried oregano leaves 1/2 teaspoon salt 1/4 teaspoon black pepper 3 cups uncooked wide egg noodles 2 cups cooked, shredded skinless, boneless chicken breast 1 cup salsa verde 6 ounces tortilla chips, coarsely crushed**

Instructions: Heat oven to 375°F. In 8-inch skillet, heat oil over medium heat until hot. Add onion and garlic; cook 3 to 4 minutes or until onion is tender, stirring frequently. Stir in broth, kidney beans, tomatoes with their juice, oregano, salt and pepper. Heat to boiling; reduce heat. Cover and simmer about 15 minutes or until vegetables are tender. Stir in noodles. Increase heat to boiling; reduce heat. Cover and simmer about 5 minutes or until noodles are tender. Stir in chicken and salsa verde. Cook just until heated through. Serve with tortilla chips crumbled on top.

You can also use a rotisserie chicken or pre-cooked chicken from the grocery store Salsa verde is a green salsa made from tomatillos Tortilla chips can be any type you like but should be thick enough that they don't turn to mush when cooked **If using pre-crushed tortilla chips, you will only need about 3 ounces

-2 tablespoons soy sauce

In a large pot over medium heat, cook the ground beef until browned. Drain any excess fat and add the onion and garlic. Cook until softened, about 5 minutes. Stir in the chicken broth, soy sauce, vinegar and sugar. Bring to a boil and add the cooked noodles. Serve warm.

Next, we add in our chicken broth and bring the mixture to a boil before reducing the heat to low and letting it simmer for about 20 minutes. Then we add our egg noodles and let them cook until they're soft. Finally, we stir in some cooked shredded chicken and serve the soup with some chips on top.
